Breadfruit Pumpkin Seed Pesto Pizzas🍕
If you're like me, who is not a fan of making pizza dough from scratch, this breadfruit pizza crust is perfect for you! Even better, it's a whole food and naturally gluten free 😉 All you need to do is peel, slice, and fry the breadfruit, then top with your favourite pizzas fixings. I made a herbaceous pumpkin seed pesto and loaded them up with violife mozorella shreds. This is great for an easy and fun weekend meal.
🥣Pesto Pumpkin Seed Pesto
-1Cup Pumpkin seeds (pre soaked, drained, & rinsed)
-1/2 Cup fresh cilantro
-1/4 Cup fresh rosemary
- 1 Tbl dried herbs (herb de Provence @frontiercoop
- 1 Tbl Paprika
-1 Cup extra virgin olive oil
- mineral salt to taste
Add everything to a food processor and pulse until finely minced and well combined. (You can customize this recipe with your favourite herbs and pesto ingredients)
🍕Breadfruit Pizzas
-Peel and slice breadfruit into thin rounds of approximately 1/2 inch thick.
-Heat a pan with coconut oil and pan fry the breadfruit slices on both sides until golden.
-When cooked, remove from the pan and place on paper to absorb the excess oil, and sprinkle with mineral salt.
-Transfer the fried breadfruit to a baking tray and top the slices with pumpkin seed pesto and vegan mozorella shreds @violife_foods , or with your favourite pizza toppings.
-Place in a preheated oven of 425ºF until the cheese is melted. Remove from the oven.
Slice and take a bite!!

This versatile fruit is a culinary lifesaver, bringing a floral burst to sambals, salads, and soups. Now, let’s make it shine in a modern twist: buah honje coulis swirled into coconut yogurt, served alongside creamy syrniki pancakes. A cross-cultural treat you don’t want to miss! 🌿 Honje Coulis - 1 Honje Fruit - a cup of sugar - 2 tbsp of cornstarch slurry - 500ml water Method: 1. Crush your washed honje fruits into chunks. Add in to a pan and boil it. 2. Simmer it until the color and fragrance is extracted. Then remove the pulps and continue reducing it until about 1/4 of its volume. 3. Add in your sugar, stir to dissolve, and lastly the cornstarch slurry. Let it cool before serving! Plant-based syrniki - a cup of silken tofu - 1/3 cup of soaked cashew - a cup of AP flour - 1/2 cup of semolina flour - 1/3 cup of sugar - 1 tsp of salt - a juice of 1/4 lemon - 1 tbsp of baking soda Method: 1. Don’t get me wrong, even if you’ve ever tried this somewhere I don’t think you would recognize it as fruit 😃 you would perhaps thought it was some sort of root crops 🤭 Breadfruit is truly a unique plant, wether or not you think it tastes like bread, regardless it is a great and a better source of carbohydrate! It’s a pretty well-known fact that breadfruit make you super full in just few consumptions! I like to think of it like Lembas Bread from the lord of the rings series 😂 btw thanks you @oi_syah for pointing out these facts 🙌🏻 Here’s the recipe for my localized sandwich that is gluten-free & Paleo-friendly: Ingredients - 1 medium semi-ripened breadfruit (sukun), peeled and sliced into “toast” shapes - 2 tbsp vegetable oil - A pinch of salt - A dab of (v) mayonnaise For the Filling - Flash-fried tempeh - Lettuce or any local leafy greens (I’m using pohpohan, a member of nettles family) - Sliced tomatoes Homemade pesto - 1 cup local herbs (e.g., garlic chives ‘kucai’, lemon basil ‘kemangi’, and a hint of lemongrass ‘sereh’) - 2 cloves garlics - 3 tbsp coconut oil - Juice of 1 lime - A pinch of salt Instructions: 1. Peel the breadfruit, then slice it into <1 cm thick “toast” shapes. (P.s. I might’ve cut a bit too thick in the video 😅 only cuz I wanted to look like toast) Remove the core if it’s too tough, I didn’t remove it and ate it just fine, just a little more fibrous. 2. (Not included in the video) boil the breadfruit for 3-5 minutes in saltwater for better taste & softer inside! 3. Rub both sides with oil and a pinch of salt. Bake in a preheated oven at 180°C for 15-20 minutes. 4. Make the pesto by blending all the pesto ingredients together until smooth. Adjust the salt and lime juice to taste. 5. Slice tempeh into thin strips. Flash-fry (<10 seconds) until slightly crispy and golden. 6. Assemble the Sandwich: Spread a layer of pesto on your breadfruit toast slices, Layer with your choice of leafy greens, sliced tomatoes, and the crispy tempeh. Top it with another slice of breadfruit toast slathered in mayo, press lightly, and enjoy! #veganrecipes #indonesianfood

·4-17Easter Fruit Pizzas 🍓 Hard not to LOVE!! Bring these to Easter and I promise you won’t be bringing any home! 😋 Ingredients: ✨Homemade or store bought sugar cookie dough ✨8oz cream cheese (softened) ✨6 T butter (softened) ✨2 cups powdered sugar ✨1 tsp vanilla extract ✨Pinch of salt ✨Fruits of choice- (strawberry, blueberry, kiwi, raspberry, mandarin oranges) ✨Egg shaped cookie cutter Directions: 1. Pre heat oven to 350° 2. Roll out sugar cookie dough and cut out egg shaped cookies using cookie cutter. Repeat process until dough is gone. (I always lightly flour the surface so dough doesn’t stick) 3. Transfer cookies to baking sheet and cook for 10-12 mins or just until golden. 4. Remove from oven and allow to cool. 5. Place cream cheese and butter in a large bowl and mix until light and fluffy. 6. Add vanilla, pinch of salt, and powdered sugar, mix with spatula until incorporated and smooth. 7. Frost each cookie with a thick layer of cream cheese frosting and decorate with fruits of chioce. 8. Serve immediately or keep in fridge until ready to serve.
