My friend and talented mixologist @Giorgio Bargiani came in the kitchen to show me his new Nudegalss Bar / Giani collection so we made a 50/50 martini and spaghetti with lemon butter and anchovies 🍝 . We agreed we should do it more often 😁 . For the Martini cocktail 🍸 Cinquanta e Cinquanta 50 ml Gin Mare Capri 50 ml Dry Vermouth blend Amalfi Lemon (Don’t forget the smile) . ·2023-11-8Baked Stuffed Conchiglioni 🤌 Full recipe below ⬇️ . Not so much a traditional Italian recipe, but more a recipe made with traditional Italian preparations. Recipe for 4 pp // Prep time: 1 h and 30 minutes INGREDIENTS 300 gr of large conchiglioni pasta Rock salt for the water 200 gr Diced mozzarella fiordilatte Grated Grana Padano to sprinkle FOR THE BECHAMEL: 500 ml milk 40g butter 40g 00 flour 50 gr of grated Grana Padano cheese Salt and nutmeg to taste FOR THE BOLOGNESE RAGU: 500g minced beef 350g of minced pork (or pancetta or sausages) 80g butter 3 tbsp olive oil 1 large onion, chopped 1 large carrot, chopped 1 celery stalk, chopped 700g peeled plum tomatoes 1 tbsp tomato paste 150ml dry white wine A sprig of thyme, rosemary and sage A splash of milk (optional) Salt and pepper to taste Method FOR THE BOLOGNESE. In a large pot roast the minced meats with olive oil and butter until lightly browned and caramelised. Add the chopped vegetables and sweat for a few minutes while mixing every now and then. Create a bouquet with the herbs, wrap it in kitchen twine and add it to the pot. When everything is golden pour in the wine, let the alcohol evaporate, add the tomatoes and season to taste. Simmer slowly for a couple of hours and add water or stock if needed and a spoon of tomato paste for a richer flavor. When ready, add a splash of milk to the ragu to mitigate the tomato acidity. Keep ready on the side. FOR THE BECHAMEL. Melt the butter in a casserole pan and add the flour. Cook and mix with a spatula for about 3 minutes until you have a golden roux. Pour in warmed milk and bring everything to the boil while sporadically mixing with a whisk. Season with little salt and grated nutmeg and set aside. Now stir in the grated cheese and let it melt slowly with the remaining heat. In a pot of salted boiling water cook the conchiglioni following the packet instructions then let them cool spread on a tray. Pour the bechamel on a large oven-proof baking dish and proceed to stuff each conchiglione with a spoon of ragù. Now add a piece of diced fiordilatte to the conchiglioni and press it well in the middle. While you are filling the pasta one by one place them as they are ready in an orderly manner over the bechamel, and when the whole tray is full, sprinkle over more grated cheese. Bake at 180 degrees for about 12 minutes or until nicely golden on top and the bechamel is hot and bubbly on the side. ·2023-1-25Did you know Semolina Gnocchi? . You won’t be wrong to consider this a kids’ meal but trust me, it will be loved by all the family 😋 Swap the tomato sauce for your fav topping or simply add brown butter and cheese to keep it simple but delicious 🧀 . Find the written recipe below ⬇️ Ingredients 250 gr of semolina (fine) 1 lt of milk 3 egg yolk 120 gr of Grana Padano, grated 30 gr of butter Salt and nutmeg to taste To bake 50 gr of butter to grease the tray 50 gr of Grana Padano, grated 500 gr of tomato sauce (cooked) Basil to garnish Preparation STEP 1 To make the gnocchi seaon the milk with a pinch of salt and nutmeg and bring to a simmer. Add the butter and pour in gradually the semolina while mixing with a wisk to avoid lumps. As it stars to boil it will thicken so use a spatula to mx. Cook while mixing costantly for about 3 / 4 minutes until you have a sort of polenta, a very thick mixture that detach from the side of the pot when you mix it. STEP 2 Remove the the pot from the stove and stir in the eggyolks as well as the grated Grana Padano cheese. Mix well until uniform and while still hot shape the doughy mixture into 2 logs of about 4/5 cm in diameter. Wet your hands for this part if the dough is too hot or wear gloves. Help yourself with parchment or film and try to create logs that are as tigh as you can but do not over worry if they aren’t perfect. STEP 3 Let the logs cool completely in the fridge for a couple of hourse than slice them into discs of about 2 cm thickness. Grease a baking dish with butter, lay the discs that we are now calling gnocchi on top of the tray and cover them with spoonfuls of tomato sauce. Optionally add a couple of knobs of butter and loads of grated Grana Padano cheese. Bake at 180 degree C for about 15 minutes until the gnocchi brown lightly on the surface. Ricette semplici, da replicare a casa dopo una giornata di studioo da schiscetta, con giusto qualche accorgimento. Tanto lo so che siete secchioni, quindi sarà facile seguirmi. Oggi un piatto unico, facilissimo da fare, ma che fa contenti, anche se un’esame è andato male. Ingredienti per 2 persone 1 latta di pomodori pelati 1 cipolla dorata 150g pancetta affumicata 5 uova Peperoncino qb Basilico fresco qb Olio extravergine d’oliva qb Parmigiano reggiano qb. Procedimento: Per questa ricetta vi serve solo una pentola e un cucchiaio di legno. In una pentola ampia fate sudare della pancetta affumicata a cubetti con un giro d’olio evo e un po’ di peperoncino. Unite della cipolla dorata tagliata sottile con i gambi del basilico e fate stufare dolcemente. Solo adesso aggiungete i pelati rompendoli un po’ con il cucchiaio di legno. Lasciateli cuocere 15/20’ fino a quando non si restringono e concentreranno il loro sapore. Solo adesso aggiungete le uova. Fate spazio nel sugo di pomodoro e rompete le uova. Chiudete con il coperchio e fiamma bassa cuocete per 5 minuti, il tuorlo deve rimanere fondente. Salate solo gli albumi così non sporcate i tuorli.
