WELCOME TO CRUISING THE CARIBBEAN 🏝️ my brand new series showing you how to make some of the best dishes from the caribbean. this is part 3 and today we’re taking a trip to Trinidad & Tobago , to make some Pelau 🇹🇹 (4) 8 boneless and skinless chicken thighs, chopped 1 tsp coconut oil 1 tbsp ketchup 1/4 cup green seasoning (recipe on my page) 2 tsp paprika 1 tsp garlic powder 1 tbsp all purpose seasoning 1 tsp salt 3 tsp sugar 1 tsp browning sauce optional * (used for the dark brown colour) 1 green onion 1/2 white onion 1/2 red tomato 1 carrot diced 200g green pigeon peas 3 tbsp chopped garlic 1 tbsp fresh thyme (dried works well if you haven’t got any) 200ml coconut milk 1 cup long grain boiled rice 1/4 cup water 1 tbsp unsalted butter 1/2 cup fresh coriander chopped 1/4 cup spring onions chopped (1) Marinate the washed and dried chicken thighs with the coconut oil, ketchup, green seasoning, green onion, white onion and tomato. Marinate for at least 30 minutes, overnight is recommended. (2) Heat up some vegetable oil in a pan, then add the sugar and mix until it becomes a dark brown which should take around 6-8 on a medium low heat. Now add the chicken with all the marinade and cook for 10 minutes uncovered, stirring frequently. (3) Add the onions, carrot and tomato, then cook for 5 minutes. Now add the pigeon peas, chopped garlic and thyme. Mix well then add the washed rice and cook for 2 minutes. Pour in the coconut milk & water, mix well. Bring to a boil, lower the heat then cover and cook for 10 minutes. (4)After 10 minutes, uncover and stir well. The rice should have absorbed most of the liquid by now. Cover and cook for a further 20 minutes for a dry pelau or 5-10 minutes for a more wet pelau (more sauce). Finally, add in some fresh coriander, green onions and butter. Fried fish, fried plantains, and avocado mash 🤤 A true Caribbean classic 🏝️ This dish instantly takes me back to Boca Chica in the Dominican Republic, enjoying fresh fish, crispy plantains, a cold soda, and that stunning beach view 😍 Ingredients: • Fish (I used snapper) • Garlic • Oregano (Dominican oregano preferred) • Sofrito • Garlic powder • Onion powder • Adobo • Paprika • Salt • Flour • Lime • Plantains • Oil Instructions: 1. Clean the fish: Thoroughly rinse the fish with vinegar, lime juice, and water (check out my previous video to see how I prep the fish). 2. Season the fish: Mix fresh garlic, oregano, and olive oil, and rub it all over the fish. Then add sofrito, garlic powder, onion powder, adobo, salt, and lime juice. Let it marinate in the fridge for at least 30 minutes. 3. Prepare the plantains: While the fish marinates, slice and fry the plantains (tostones) and prepare a seasoned flour mix. 4. Season the flour: Combine all-purpose flour with garlic powder, onion powder, and paprika. 5. Coat and fry: Coat the marinated fish in the flour mixture and fry in hot oil over medium-high heat until golden on both sides.
