It just feels so perfect for the season. Here’s the recipe 👇 . Ingredients 1 cup packed light brown sugar (divided) 1 1/2 teaspoon ground cinnamon 1/3 cup coconut oil, melted 2 teaspoons vanilla extract 2 eggs 1/2 cup almond or dairy milk 1 1/2 cups all-purpose flour 1 1/2 teaspoons baking powder 1/2 teaspoon salt 1 large apple, peeled and finely chopped (about 2/3 cup) Instructions Preheat oven to 350 degrees. Spray a 8×4 inch loaf pan with nonstick spray. In a small bowl, combine 1/3 cup brown sugar with the cinnamon and set aside. Combine remaining brown sugar and coconut oil until smooth. Add vanilla, eggs, and milk, and mix until combined Add flour, baking powder, salt, and apples. Pour half the batter into the prepared pan. Pat apples into the batter with the back of a spoon. Sprinkle with half of the cinnamon sugar mixture. Pour the remaining batter in the pan; top with remaining brown sugar-cinnamon mixture. Pat topping into the batter with the back of a large spoon. ·2023-10-31APPLE PIE BREAD PUDDING I said what I said — you need this 🍂 Recipe below OR go to my website through the link in my bio 🤎 #Recipe Details (8-10 servings): Ingredients: - 12 thick-cut slices of brioche bread or 12 brioche rolls, preferably dried out overnight, cut into 1” cubes - Optional: turbinado sugar, for topping Apple Pie Filling: - 1 3/4 lb apples of choice (~5 apples; I used a mixture of Gala and Granny Smith), peeled and diced - 4 tbsp salted butter - 2 1/2 tbsp all-purpose flour @Bob’s Red Mill - 1 tsp apple pie spice @McCormick Spices - 3/4 cup brown sugar - 1/2 cup water Custard: - 1 cup milk of choice - 1 cup heavy cream - 1 1/2 tbsp salted butter - 1/4 cup + 3 tbsp granulated sugar - Pinch of salt - 1 tsp vanilla extract - 1 tsp cinnamon - Optional: 1/2 tsp apple pie spice - 4 eggs, at room temp Instructions: Preheat the oven to 350F. Grease a 9” round (or 8” or 9” square) baking pan with cooking spray, then line with a sheet of parchment paper that covers the bottom and sides. Place onto a baking sheet; set aside. Start by preparing the apple pie filling. In a medium saucepan over medium heat, melt the butter. Add the flour and apple pie spice, and stir well. Then, add the brown sugar and stir. Add the diced apples and water, stir and cover. Cook over medium heat until the apples are soft, stirring occasionally (10-15 minutes). Remove from the heat and strain the juices, saving them to top the bread pudding later. Prepare the custard. Combine all of the ingredients for the custard, except for the eggs, in saucepan over medium-low heat. Whisk to combine until the butter is melted. Remove from the heat, add the eggs one at a time, and whisk in between each addition. DO NOT cook any longer, the custard will thicken as it cooks in the oven. Set aside. Cut the bread into 1” cubes. Place 1/3 of the bread cubes into the bottom of the prepared pan. Press down to compress. Spread about 1/3 of the apple pie filling on top of the bread cubes. Place another 1/3 of the bread cubes on top, press down, and spread another 1/3 of the apple pie filling. Finish by topping with the last 1/3 of bread cubes, and the rest of the apple pie filling. Pour the custard all over the bread, making sure all of the pieces are well-soaked. Gently press down on the bread to make sure there are no dry parts. Then, sprinkle the top with turbinado sugar if desired. Baker 350F for 35-40 minutes on a baking sheet, until the top is golden and set, but still slightly wobbly when shaken. Remove from the oven and let stand for 10 minutes, then remove from the pan. Serve warm with a scoop of vanilla ice cream and the juices from the apple pie filling. They’re gluten free, dairy free, and just the perfect texture🤌🏼 I also love that I get extra protein since I made them with @Bob’s Red Mill new Protein Oats ! #ad These Oats are my new go-to, they’re made with 1 simple ingredient: whole grain oats, but have 9 grams of protein per ⅓ cup…50% more than regular rolled oats! Make sure to SAVE this recipe to try for yourself and #SuperChargeWithBobs! Here’s what you need ⬇️ — Pumpkin Oat Bars: ½ cup pumpkin puree 2 large eggs ⅓ cup coconut oil, melted & cooled ⅓ cup maple syrup ¼ cup coconut sugar 1 tsp vanilla extract 3/4 cup oat flour 1/2 cup protein oats 1 tsp pumpkin pie spice ½ tsp ground cinnamon 2 tsp baking powder ½ tsp baking soda ¼ tsp salt Crumble Topping: ⅓ cup protein oats ⅓ cup GF flour 3 tbsp coconut oil 3 tbsp coconut sugar 1½ tbsp maple syrup 1 tsp pumpkin pie spice Optional glaze: 1 cup powdered sugar ½ tsp pumpkin pie spice Splash vanilla extract 1-2 tsp almond milk — Instructions: 1. Preheat the oven to 350F and line a 8x8 baking pan with parchment paper. 2. To a large bowl, whisk together pumpkin puree, eggs, melted coconut oil, maple syrup, coconut sugar, and vanilla extract. 3. Next, add your oat flour, oats, pumpkin pie spice, cinnamon, baking powder, baking soda, and salt. Stir together until just combined. Set aside. 4. In a small bowl, make your topping by combining all ingredients. I like to use my hands to press it together to form clumps. Set aside. 5. To the parchment-lined 8x8 pan, add your pumpkin batter and spread in an even layer with a spatula. Top with crumble topping and use your fingers to lightly press into the batter to help it stick to the top. 6. Move 8x8 pan to the oven and bake at 350F for 25-28 minutes, or until a toothpick inserted comes out moist, but crumb-free. 7. Let cool completely before removing from the pan, topping with optional glaze, and cutting into 9 or 12 slices.
