🍓Strawberry Santas🍓
These adorable strawberry Santas are the perfect festive treat to make this season🥰 Not only are they so incredibly easy to make (no baking required!), but they are also on the healthier side and perfect for those friends or family with sensitivities, as they are dairy-free & gluten free❤️
✨Ingredients
10-15 large fresh strawberries
1/2 cup melted vegan white chocolate
1/4 cup vegan cream cheese
✨Optional
black sesame seeds for eyes (or black sprinkles)
red round sprinkles for nose (you can also use red frosting or icing)
✨Directions
Melt the vegan white chocolate and measure out 1/2 cup of melted chocolate.
To the melted chocolate, add the vegan cream cheese and whisk them together.
Transfer the mixture to a piping bag and slice off the bottom. I added a piping tip to the end of my piping bag to make cuter piped patterns, but that part is optional.
Wash your strawberries and cut off the bottom where the stem is. Then cut each strawberry in the middle.
Remove the top part of the berry and pipe a generous amount of frosting mixture. Then close with the top of the berry and pipe on some frosting on top for a hat. You can also add buttons.
I then added black sesame seeds for eyes and a round red sprinkle for a nose.
Enjoy!

✨Homemade Almond Joy Bars✨ Almond Joy bars used to be my favorite candy when I was younger, and I wanted to recreate my own vegan version. They are actually so easy to make on your own at home!🤍 ✨Ingredients 3 cups unsweetened shredded coconut flakes (175g) 1 can sweetened condensed coconut milk (7.4 oz) 1 cup dark chocolate chips about 10 almonds ✨Directions Add the coconut flakes and sweetened condensed coconut milk to a bowl and mix them well. Scoop up a small handful of the coconut mixture and shape it into a bar. Place an almond on top and press it down into the coconut mixture gently. You should get about 10 bars. You can place the bars in the fridge to harden for 20-30 minutes if they are on the softer side. Melt the chocolate and dip each bar into it. You can cover the whole bar in chocolate like a traditional Almond Joy, or you can dip the bottom of the bar into the chocolate and drizzle more chocolate on top if you want a more decorative look. ·2d ago ✨🍓Berry Baked Oat Bars🍓✨ These delicious fruity baked oats are loaded with all the healthy nutrients and make for the best breakfast😍 ✨Ingredients 1 cup oats (80 g) 1/2 cup oat flour (ground up oats- 40 g) 1/2 cup vanilla protein powder 1 cup mashed banana (about 2 large ripe bananas) 1/4 cup creamy natural peanut butter 2-4 tbsp maple syrup* 1/3 cup dairy-free milk 1 tbsp ground flax seeds 1 tsp baking powder 2 tsp vanilla extract 1/2 tsp salt 1 cup mixed berries (+ more to top) *Note: add 2 tbsp of maple if you prefer less sweetness and up to 4 for sweeter bars. ✨Directions In a large bowl, mash up the bananas. Then add the peanut butter, maple syrup, milk, flax, baking powder, vanilla, salt, oats, and oat flour. Mix everything well until combined. Fold in the berries. Line a baking tray with parchment paper. I used a 9 x 9 inch baking tray. Pour the oat mixture into the baking tray. Add more berries and bananas on top, if you wish. Combine all of the ingredients well until you have a runny batter. Lightly grease a pan and turn the heat to medium. Scoop up a ladle of batter and pour the batter into the pan (about 1/4 cup at a time). As soon as you have poured the batter, grab the pan by the handle and swirl the pan so that the batter is evenly distributed in a thin layer. Cook for 2-3 minutes, then flip and cook for another minute on the other side. Repeat for all of your pancakes. Once the crepes have cooled, start layering them on a large plate. ·5-25✨🍋Lemon Bars🍋✨ These lemon bars are tangy & sweet, and just about the most perfect spring dessert you can make🤩 They are so creamy, but made entirely vegan and also gluten-free!🥰 They are so easy to make too, and are sure to impress anyone that you make them for🤍 ✨Crust Ingredients 2 cups all-purpose flour (I used 1:1 gluten-free flour) 1 cup vegan butter 1/2 cup maple syrup 2 tsp vanilla extract 1/2 tsp salt ✨Lemon Bar Ingredients 1 cup coconut cream* 1/2 cup soaked cashews* 1/2 cup lemon juice 2 tsp lemon zest 1/2 cup maple syrup 1/2 cup granulated sugar 1 tsp vanilla extract 1/3 cup cornstarch pinch of salt pinch of turmeric (optional, for color) *Coconut cream: refrigerate a can of coconut milk overnight. Then when you open the can, scoop out just the solid part that has formed on the top & measure out one cup of this. *Cashews: soak the cashews overnight in water to soften them. If you forget, you can also soak them in boiling hot water for 1-2 hours. ✨Directions Start by preparing the crust. Combine all of the crust ingredients in a large bowl & mix. Line a square baking pan with parchment paper & grease it with oil. Transfer the crust ingredients to the baking pan & press them down into an even layer. Bake the crust for 15-20 min at 350*F, until the edges of the crust are golden brown. Use a fork to poke holes all around the baked crust. Don't poke all the way to the bottom of the crust, just about halfway. To make the filling, combine the coconut cream, cashews, lemon juice & zest, maple, sugar, vanilla, cornstarch, salt, and turmeric to a blender. Blend until smooth. Transfer the lemon filling to a saucepan over medium heat. Stir continuously & cook for 4-6 minutes, until the mixture starts to significantly thicken. Once it has thickened, pour it on top of the crust & level the top. Refrigerate the lemon bars overnight, or for at least 4-6 hours, until the filling hardens fully. Once they are ready, slice the bars, dust some powdered sugar on top, & enjoy! #desserts #baking #springrecipes

Or you can also make my homemade cookie dough that I have shared on my site if you search “chocolate chip cookies”💕 ✨Ingredients vegan croissants (I got mine at @wholefoods from their bakery section) vegan chocolate chip cookie dough (I used @sweetloren) ✨Optional Toppings melted dark chocolate almond slices powdered sugar ✨Directions Slice the croissant in half "hamburger style". Place cookie dough on the bottom half of the croissant and flatten it out. Close the croissant and flatten another piece of cookie dough on top of the croissant. Bake the croissant cookie for 12-15 minutes at 350F. Drizzle melted chocolate on top and add sliced almond and powdered sugar on top, if you wish! #baking #dessert #easyrecipe

·5-22✨🫐🍋Blueberry Lemon Scones✨🫐🍋 Scones are one of the best coffee shop treats and with spring coming, I wanted to share this bright and fruity flavor, but make them vegan🥰 ✨Scones 2 1/3 cups all-purpose flour (280 g) 1 tbsp baking powder 1/2 tsp salt 1/3 cup granulated sugar (67 g) lemon zest from 1 lemon (about 1 tbsp) ½ cup cold unsalted vegan butter (115 g, cut into cubes)* ¾ cup canned coconut milk* 2 tsp vanilla extract 1 cup fresh blueberries ✨Icing 1/4 cup vegan cream cheese 4-5 tbsp powdered sugar 1 tbsp fresh lemon juice (the juice from the lemon that we zested above) 1/2 tsp vanilla a pinch of salt ✨Notes *Make sure that the butter is very cold. I even like to place mine in the freezer for about an hour before making this recipe. *Use canned coconut milk as opposed to regular dairy-free milk as this gives a thicker consistency and acts as our heavy cream replacement. ✨Directions To a bowl, add the flour, baking powder, salt, sugar, and lemon zest and mix those well. Next, add in the cold butter that you've cut into cubes and use your fingers to mix the butter with the flour mixture. You don't have to break up all of the clumps! It's good to have some clumps of butter that melt as the scones bake. Add in the blueberries and coconut milk and combine them with the rest of the ingredients. Flour a surface, and dump the scones mixture on top. Use your hands to shape the mixture into a circle that's about 2 inches thick in height. Cut the circle into 8 equal pieces and place each on a parchment-lined baking sheet. Brush coconut milk on each of the scones then bake for 18-20 minutes at 400F, until they are golden on top. While the scones are baking, whisk up the icing ingredients. Once the scones are done baking and *fully* cooling, drizzle the icing on top and enjoy! #desserts #baking #breakfast #snack

·5-18✨🤎Vegan Tiramisu🤎✨ Tiramisu is one of my favorite desserts of all time, and this vegan version never disappoints🥰 ✨Cream Filling 21 oz of firm tofu drained from all the water (about 1 1/2 blocks of tofu) 1 cup vegan cream cheese (8 oz) 2/3 cup white granulated sugar 1/3 cup dairy-free milk 2 tbsp fresh lemon juice 1 1/2 tbsp vanilla extract a pinch of salt ✨Other Ingredients about 20 vegan ladyfingers (check my website for a recipe. Alternatively, you can use store-bought plain vegan cookies.) 1 cup warm water 2 tbsp instant espresso powder 2 tbsp rum (optional) cacao powder or cocoa powder for dusting on top ✨Directions Open the packages of tofu and drain all of the water. Use a paper towel or kitchen towel to press out all of the water from the tofu. Then add it to a food processor. Add the rest of the cream ingredients to a blender and blend until super creamy and smooth. Set the filling aside. In a separate bowl, add the warm water, then whisk in the espresso powder and rum. Dip each ladyfinger into the coffee & rum mixture for a few seconds on each side. Then lay each ladyfinger in a baking dish. I used a 9 x 9 inch pan. Once the whole bottom layer is covered in ladyfingers, pour half of the cream mixture on top of the ladyfingers and spread in an even layer. Dust a generous layer of cocoa powder on top of the cream filling. Now layer another layer of ladyfingers on top of the cream, top with the remainder of the cream filling, and another generous layer of cocoa powder. Refrigerate the tiramisu overnight to allow all of the flavors to absorb and the ladyfingers to soften. Take it out the next day, slice it, and enjoy! #baking #dessert #vegan

I added 3 tbsp) 1 tsp vanilla pinch of salt ✨Optional toppings vegan whipped cream (whisk vegan heavy whipping cream with a little bit of powdered sugar, vanilla, and a pinch of salt) peanut butter cups ✨Directions In a large bowl, combine the crust ingredients and mix well. Line a pie plate with parchment paper and gently grease it. Transfer the crust ingredients to the pie plate and use your fingers to shape it into a crust. Bake for 10 minutes at 350°F. Whisk together the filling ingredients and transfer them to the baked pie crust. Use a spatula to level off the top of the pie. ·4-21✨🍋Lemon Coconut Macaroons🍋✨ These lemon coconut macaroons are the best tropical and refreshing treat for the spring😌 With just a few ingredients, they are the perfect balance of citrusy, tangy, and sweet! ✨Ingredients 2 cups Let’s Do Organic Unsweetened Shredded Coconut Flakes from @edwardandsons (170g) 1/4 cup almond flour (24g) 1/4 cup maple syrup 1/3 cup melted coconut oil 2 tbsp lemon juice zest of 1/2 lemon 1 tsp vanilla 1/4 tsp salt a pinch of turmeric (optional, for color) ✨Directions In a bowl, combine all of the macaroon ingredients together and mix well. Squeeze the dough together in your hands and if it clumps together when squeezing it, it's ready. If it crumbles and falls apart, add another tablespoon of lemon juice (or dairy-free milk) until it sticks together. Take a cookie scoop and scoop up a dollop of dough. Drop it on a parchment-lined baking sheet. Repeat until you run out of dough. You will get between 8-10 cookies, depending on how big you make them. If you want more, feel free to double the recipe. Bake the macaroons at 350F for around 12 minutes, until the edges are golden brown. Allow the cookies to fully cool. If they are not fully cooled, they may fall apart.
