Easy lunch idea: 10 min chickpea salad sandwich🥪🌿
If you need a healthy & easy lunch idea that you can quickly assemble or even meal prep beforehand, try this chickpea salad sandwich! it’s perfect for summer, you can eat it by itself as well if you prefer something lighter or in a wrap! One of my favorite lunches🫶🏻
🥪Ingredients:
1 medium can chickpeas - drained and rinsed
1 small red onion - finely diced
1/4 cup cucumber pickles - diced - optional
4 big tosp unsweetened soy yogurt OR vegan mayo
1 big tsp dijon mustard
1 tbsp tamari | gf soy sauce
1/2 lemon juice or 1 tbsp rice vinegar
Salt & black pepper
Paprika
🫶🏻Add ons:
Aragula Tomato
Micro greens
Dairy free cream cheese
2 slices bread - toasted (I used the one from schar)
🫶🏻Instructions:
Finely dice the red onion and chop the pickles if using.
Drain and rinse a can of chickpeas and mash them with a veg masher or a fork.
Add the onion, pickles, soy yogurt or vegan mayo, dijon mustard, tamari, salt & pepper, lemon juice or vinegar, salt and black pepper and paprika - and optionally, other spices.
Add them to toasted bread with some arugula | rocket, cherry tomatoes, micro greens and dairy free cream cheese. You can eat this by itself as well or with a wrap as well😋

if in doubt, an open sandwich will always work <3 🍅 (for 2-3 servings) you’ll need: - 1x can chickpeas - handful chopped spring onions - a handful chopped chives - 2-3tbsp mayonnaise (or sub greek yogurt for a lighter version) - 1 heaped tsp dijon mustard - salt & pepper to taste - 1 sliced tomato - drizzle of olive oil - fresh sliced bread method: 1. begin by mushing the chickpeas in a bowl until you reach an almost smooth consistency (you want some texture). 2. add in the onions, chives, mayo, mustard and salt & pepper and mix thoroughly. 3. grab the bread (toasted or not) and top with the chickpea mix. 4. layer some sliced fresh tomato and drizzle with olive oil… enjoy xxx🍅 #lunch #lunchideas #snack #snackideas #yogurt #chickpeas

Save the recipe below and let me know in the comments if you’re going to give it a go🙌 Ingredients: 2 apples 100g dark chocolate (I used dairy-free) Nut butter (I used almond butter) Crushed nuts Sea salt Method: Wash and core the apples, then slice them into rings. Melt dark chocolate in a microwave-safe bowl or use a heatproof bowl over a pot with hot water that has just been boiled. Dip each apple slice into melted chocolate, allowing the excess to drip off. Place the slices on a parchment-lined tray. Drizzle each apple slice with almond butter and sprinkle crushed nuts for added crunch. Chill the slices in the refrigerator until the chocolate sets.
