Sambal satay tofu sando
Ingredients (serves 2)
2 ciabatta rolls
Lettuce
Coriander
Tofu:
200-300g firm tofu, cut into 8 slices
2 tbsp sambal
1 tbsp brown sugar
1 tbsp tamari
3 tbsp water
Sauce:
2 tbsp peanut butter
3 tbsp vegan mayo
1/2 tbsp tamari (or light soy sauce)
1/2 lime juice
1/2 tbsp agave
Slaw:
1 small carrot, sliced into ribbons (or grated)
1/4 small white cabbage, thinly sliced
2 tbsp rice vinegar
4 tbsp water
1 tsp caster sugar
1/4 tsp salt
Method
1. Lay the tofu slices out in an air fryer then cook at 220°C for 10-15 minutes, flipping half way until golden & crisp (alternatively, pan fry. I just like that air frying gives me hands off time so I can prepare everything else quickly)
2. Meanwhile, make the other components. For the slaw: add all the ingredients to a container/bowl, cover & vigorously shake for 30 seconds (this will help break down the veggies to pickle quicker) then set aside
3. Mix all the sauce ingredients together to make the satay mayo
4. Mix the rest of the tofu ingredients together & heat a frying pan up to medium-high while the tofu finishes cooking
5. When done, transfer the tofu to the frying pan then pour over the mixture you made earlier. Let this simmer & reduce until it coats the tofu in a sticky glaze
6. Toast your ciabatta & assemble with satay mayo, lettuce, sambal glazed tofu slices & pickled slaw then top with coriander & enjoy!
